Yeah you definitely want to keep that bounce and exit rate down. Bad design won't keep those figures.

I just added a Google + button to my home page, I'm not convinced as to how much of a difference it is going to make to my business. For sure some businesses will make huge benefits from it, I think I set it up correctly,,,

its very important... it's almost as important as the quality of the products and the prices... if a website is designed badly, customers might perceive the company as not reliable

The benefit of social media is limited but since it is free and doesnt require any maintenance, any benefit at all will be a good thing... do you also have the facebook and twitter buttons?

Just gave you a click, so you should see at least 1x plus1. You can view the number of clicks in your Google Webmaster Tools.

A good resource is Jakob Nielsen's UseIt.com. His thesis, whilst not universally applicable on all areas, is worthwhile implementing. Follow conventions, and you'll win.

Web design is very important. It's the shop window, the brand, the personality, the professionalism of the business need to come across immediately or the potential customer will be lost. Once you've got their attention the other attributes come in to play, usability, content and security are all paramount too.
